Waldorf Sandwiches

I loved the way this sounded, but I was surprised at how well they tasted. All the tasty of a salad, but easier to eat.

  • 2 c. shredded unpeeled apple
  • 1 tablespoon lemon juice
  • 2 celery ribs, finely chopped
  • 1 cup chopped walnuts
  • 1/4 cup mayonnaise
  • 14 slices cinnamon-raisin bread

In a bowl, toss apple with lemon juice. Stir in celery, walnuts and mayonnaise; mix well. Spread apple mixture on seven to eight bread slices; top with remaining bread.

Cranberry Bars

These were found on All Recipes but I want to make sure we know where to find them…

  • 1 (12 oz) pkg. whole cranberries
  • 1 cup white sugar
  • 3/4 cup water
  • 1 (18.25 ounce) pkg. yellow cake mix
  • 3/4 cup butter, melted
  • 2 eggs
  • 1 cup rolled oats
  • 3/4 cup packed light brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon

In a saucepan over medium heat, combine the cranberries, white sugar, and water. Cook, stirring occasionally until all of the cranberries have popped, and the mixture is thick, about 15 minutes. Remove from heat, and set aside to cool.

Preheat the oven to 350 degrees F (175 C).

In a large bowl, mix together the cake mix, melted butter, and eggs. Stir in the oats, brown sugar, ginger and cinnamon. Set aside about 1 1/2 cups of the mixture, and spread the rest into the bottom of a 9×13 inch baking dish. Pack down to form a solid crust, getting it as even as possible. Spread the cooled cranberry mixture over the crust. Pinch off pieces of the remaining mixture and place evenly over the cranberry layer.

Bake for 35 to 40 minutes in the preheated oven, until the top is lightly browned. Cool in the pan for about 40 minutes before slicing into bars.

Chocolate Macaroon Squares

  • 18 1/4 oz. box of chocolate cake mix
  • 1/3 cup butter or margarine (softened)
  • 2 eggs
  • 14-oz. can sweetened condensed milk (1 1/4 cups – not evaporated milk)
  • 1 tsp. vanilla extract
  • 2 cups (12-oz. package) semi-sweet chocolate chips
  • 1 1/3 cup flaked coconut
  • 3/4 cup chopped nuts (optional)

Beat cake mix, butter and 1 egg in a large mixer bowl until crumbly. Firmly press into bottom of greased 13 x 9 inch baking pan.

Combine sweetened condensed milk, remaining egg and vanilla in medium bowl; stir in chocolate chips, 1 cup of the coconut and nuts, if using. Spread over crust. Sprinkle with remaining coconut.

Bake in a preheated 350 degree F oven for 30 – 40 minutes or until golden brown (center will set when cooled). Makes about 2 dozen squares.

Chocolate Crackles

  • 1 package devils food cake mix (1 lb., 2 1/2 oz.)
  • 2 eggs, slightly beaten
  • 1 tbsp. water
  • 1/2 cup solid vegetable shortening
  • 10xx sugar

Combine cake mix, eggs, water, and shortening. Mix with a spoon until well blended. Shape dough into balls the size of small walnuts. Roll in 10x sugar. Place on greased baking sheet and bake at 375 degrees for 8 – 10 minutes.

Makes 48 cookies.

Lemon Crisp

  • 6 tsp. butter
  • 3/4 cup brown sugar
  • 1 cup flour
  • 1 1/2 tsp. soda
  • 1 1/2 tsp. salt
  • 3/4 cup crushed saltines
  • 1/2 cup flaked coconut
  • 3/4 cup granulated sugar
  • 2 tsp. corn starch
  • 1/4 tsp. salt
  • 1 cup hot water
  • 2 beaten egg yolks
  • 1/2 tsp. grated lemon peel
  • 1/2 cup lemon juice
  • whipped cream

Cream butter and brown sugar. Stir in next 5 ingredients. Press 1/2 mixture into 8×8 inch pan. Bake at 350 degrees for 10 minutes.

Meanwhile, in saucepan, combine granulated sugar, cornstarch, and salt. Gradually stir in water. Cook and stir gradually until mixture is thick and boiling. Boil 2 minutes. Remove from heat and stir small amount into egg yolks. Return to pan and bring to boil, stirring constantly. Remove from heat. Gradually stir in lemon peel and juice. Pour over baked crust and top with remaining crumbs, Bake at 350 degrees for 30 minutes or until crumbs are lightly browned. Top with whipped cream.

Savory Steak Cassarole

  • 2 tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. mace
  • 1/2 tsp. ground pepper
  • cayenne pepper
  • 1 1/2 lbs. Flank steak
  • 1 large onion, thinly sliced
  • 1 tbsp. Worcestershire sauce
  • 1 tbsp. malt vinegar
  • 1 tbsp. brown sugar
  • 3 tbsp. chopped fresh parsley
  • 1/2 cup beef stock

Preheat oven to 250 degrees. In a bowl combine flour, salt, mace, pepper and cayenne to taste. Rub mixture all over steak. Put into baking dish and surround with onion slices. In a bowl combine Worcestershire sauce, vinegar, sugar, 2 tbsp of the parsley and stock. Pour over meat. Cover tightly with foil and bake for three hours. Garnish with remaining parsley.

Pizza Loaf

  • 1 lb. ground beef
  • 1/4 cup sliced mushrooms
  • 1/2 cup minced onion – salt and pepper to taste
  • 1 tsp. paprika
  • 1/2 tsp. oregano
  • 1/2 tsp. garlic salt
  • 1 8 oz. can tomato sauce
  • 3/4 cup chopped black olives
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 loaf frozen bread dough (thawed)

Saute beef, mushrooms, and onion until meat is browned. Add seasonings and tomato sauce. Cover and simmer for 30 minutes. Add olives and let cool. Prepare dough through 1st rising. Punch down. Roll into rectangles. Place filling down center and sprinkle with cheeses. Make diagonal cuts down both sides 1 inch apart. Bring strips up over filling, crisscrossing. Seal with water. Place on greased baking sheet. Bush and butter. Bake at 350 degrees for 40 minutes.

Tomlinson Lasagna

  • 1 lb. ground beef
  • 3 1/2 cups canned tomatoes
  • 1 8-oz. can seasoned tomato sauce
  • 1 or 2 envelopes spaghetti sauce mix
  • 2 cloves minced garlic
  • 8 oz. lasagna noodles
  • 6-8 oz. sliced mozzarella cheese
  • 1 cup ricotta cheese
  • 1 1/2 cup grated Parmesan cheese

Brown meat (remove fat) and stir in remaining ingredients. Simmer for 40 minutes. Assemble casserole and bake at 350 degrees for 25 – 30 minutes.

Crock Pot Pot Roast

  • 3 med. potatoes (sliced thin)
  • 2 large carrots (sliced thin)
  • 1 onion (sliced)
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 3-4 lbs. rump roast (pot roast)
  • 1/2 cup water / beef broth

Put vegetables in bottom of crock pot. Salt and pepper meat then put in pot. Add liquid. Cover and cook low 10-12 hours or high 5-6 hours

Tomlinson Chili

Serve this over rice with a nice chunk of bread!

  • 1 1/2 cups tomato juice or 1 28-oz. can hole tomatoes in juice
  • 1/2 tsp. salt
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • 1 lb. ground beef
  • 2 tbsp. margarine
  • 1/2 cup chopped onion
  • 1 11-0z. can red kidney beans (undrained)

Brown meat in margarine. Add all other ingredients and simmer for 1 1/2 – 2 hours.
